Kitchen Duty ...


Nathan had checked the freezer to see how much deer meat he had ...
I was going to take some back home with me to make some more Jerky ...
He spotted bags full of meat ... that were to be made into sausage ...
since I was there and he was going to be getting a freezer full of moose soon ...
It was decided that we would work together and make sausage ...
We started the process after dinner ...

The chunks of meat were trimmed ...
grinder ready ...
thru the machine it went along with some pork ...
I started out pushing the meat into the grinder ...
but that was a tough job for a shorty like me ... so Nathan took over that job ...
after mixing all the meat in a large pot ...
and adding seasoning ...
we were ready to start stuffing the casings ...
half the batch was to be made into Italian Sausage ...
and the other into Breakfast Sausage ...
We ended up making only one batch that night ...
leaving the other batch for the morning ...
was getting to late and we were tired ...
 
This was the first batch done ... not bad for a couple of rookies ...
made about 20 lbs of Italian Sausage ...
completed the Breakfast Sausage Mix of  20 lbs the next morning ...
packaging all of them up and putting them into the freezer 

There was some of the ground meat left over ...
instead of making a few patties ...
 I put it into a loaf pan ...
baked it up  ...
and had a few slices for dinner ...
just the right amount of seasoning for my taste ...
was delicious ...

I did get a few packages of Sausages ...
as well as getting the extra meat ...
to be made into Jerky ...
one of these days ...
(I will bring some to Ian & Kendall the next time we go for a visit... soon I hope ...)
